Tasty Tuesday: Banana Blueberry Oatmeal Muffins
I think that these muffins are the best muffins I’ve ever made. It’s a true story. Of course, I like dense fruity muffins. If you like crumbly dry muffins, this definitely isn’t for you. It was inspired by the fresh blueberries that were suddenly abundant at the grocery store and the two bananas sitting in our fruit bowl that were past their prime. A quick Google and I had a recipe that I could adapt to my taste.

Banana Blueberry Oatmeal Muffins
(adapted from this recipe)
Makes 6 jumbo muffins or 12 regular muffins
INGREDIENTS:
- 1 cup flour
- 1 cup oatmeal
- 1 tsp baking soda
- 1/2 tsp salt
- 4 TBS unsalted butter
- 1/3 cup sugar
- 1/3 cup brown sugar
- 2 large eggs
- 2 ripe bananas, mashed
- 1/3 cup milk
- 1 tsp vanilla extract
- 1 pint fresh or frozen blueberries
INSTRUCTIONS:
Preheat your oven to 375 degrees. Combine the flour, oatmeal, baking soda and salt, and set aside.
In your mixer, cream butter and sugars until light and fluffy.
While mixing, add one egg at a time and combine well. Then add in milk, vanilla and banana; mix well.
Stir in flour/oatmeal mixture with as few strokes as possible and then add blueberries.
Divide the batter evenly in your well-greased muffin pans (I went for jumbo muffins this time). Bake for 25 – 28 minutes at 375 degrees, or until a toothpick comes out clean.
For a true experiment, these muffins came out very well. You can really taste the banana, blueberry and oatmeal in every bite, which I love.

P.S. Thanks to reader and Facebook fan Caitlyn N. who inspired me to get back to baking by strapping the newborn into his Ergo carrier. The sound of the mixer put him right to sleep…which makes me wonder, what can’t a KitchenAid mixer do!?


























Oh my, these look delicious. Think they’d taste the same if I left the banana out? I’m weird and only like bananas by themselves, not as an ingredient in something else.

I remember baking cookies with Junior strapped into the Bjorn. It worked well until I needed to open the oven!

I keep a big wicker basket off the kitchen for all of Gabe’s coats and hats and for awhile there, I was just sticking him in there with a toy or two and dragging it into the kitchen while I cooked. Of course that was before he started trying to get out of every containment device we have. But I’m now wishing I had a plate of these in my kitchen waiting for me tomorrow morning. I have a love affair with muffins. And I desperately need to make my own healthy versions because the sugar covered grocery store ones are KILLING me!
