Tasty Tuesday: Cheddar Leek Mini Muffins
It definitely wasn’t a pregnancy craving that had me making 150 cheddar leek mini muffins a few weeks ago. Instead, it was my annual role in organizing a holiday open house for one of our local charities. The ladies on the committee provide all of the hors d’oeurves for the 300-person event, which is quite a feat if I do say so myself.
I have to admit that I was looking for the easiest idea possible when it came to a passed hors d’oeuvre, so these muffins, which I could easily whip up and make in a large batch, hit the mark.
If you’re looking for a last minute contribution for a holiday dinner or event, these savory muffins might just do the trick. I used this simple cornbread bite recipe from Martha Stewart and stirred in 1 finely chopped leek and 1.5 cups of sharp cheddar cheese. They were quite tasty right out of the oven, and just as good at room temperature. At the end of our big event, there was not a muffin in sight, so I think they were a hit.
I could definitely imagine using this recipe again in the future, perhaps even to make larger muffins that could be served with dinner. What do you think? Are you a savory muffin type of person?




















I made my first savory muffin just a few months ago. It was so fantastic and totally opened my eyes! Who knew I would love them so much – even without chocolate ships, etc!

Did you cook the leek first? Or do you add it raw? This recipe sounds delicious and I can’t wait to try it!

I did not cook the leek first; just sliced them very thin and popped them in the batter. Seemed to work like a charm!
