Tasty Tuesday: Pumpkin bread
Sometime back in August I had the urge to make pumpkin bread (surely a craving I can chalk up to pregnancy?). Although it is normally a fall food, it tasted great at the time. The recipe that I use is big and makes two full-sized loaves (using only one can of pumpkin). So, I tried freezing it for the first time, not knowing how it would last.
But, lo and behold, I thawed the loaf out this past weekend when we had visitors and it was just as good!
It is ironic that the recipe that I use (which I randomly found on Google a couple years ago) is called Downeast Maine Pumpkin Bread and we happen to live in Downeast Maine. I don’t think this area is necessarily known for its pumpkin bread or products, but perhaps its the perfect blend of spices that smells like a warm, cozy New England kitchen in the fall? Who knows, but the recipe is good and essentially fail-proof.
Also, the recipe doesn’t call for nuts, but I added walnuts to mine (I like the little extra crunch).

Yummy! I just made some also and froze it with the hope that it will still be amazing defrosted. Glad to hear it worked out for you!
