Tasty Tuesday: Pulled Chicken Sandwiches

A couple of weeks ago I pledged to share more healthy, everyday recipes in addition to the butter-filled delights that normally grace the Tasty Tuesday pages.  While baking comes semi-naturally to me, cooking is more of a challenge, so I usually stick with simple thrown together meals of grilled chicken and vegetables.  But this past week I researched and made a couple of healthy, easy and quick recipes for week-night dinners.

This recipe for pulled chicken sandwiches is one of the successful meals we tried.

I was surprised as anyone that to see a BBQ sandwich recipe on the Cooking Light website.  But, it is a nice light dinner that boasts only 300 calories (depending on the bread you choose).  Made with boneless, skinless chicken thighs and common kitchen ingredients, this sandwich had the perfect mix of sweet and spice.

This meal took about 45 minutes to prepare.  Cutting the chicken before cooking and pulling it apart later were the most time consuming parts of the process.  After chopping the meat into 2-inch pieces, the chicken simmers in a mix of ketchup, mustard, molasses and spices.  After about 25 minutes, you can pull the chicken apart using two forks.

I chose to serve our sandwiches on white rolls and I pressed them, with pickles tucked in, on our old George Foreman grill (remember those things!?).

    Those look delish! I’ve been wanting to make pulled pork sandwiches, but the hubby has a weird aversion to them… maybe I can do this instead? Also, this makes me wonder if it could be done in the slow cooker – I love slow cooker meals in the winter – just throw a bunch of ingredients in the pot before you leave for work, and come home to a warm meal! Any thoughts?

    Hey Jen,

    While I certainly have not mastered the art of slow cooking, I do feel like this could work in a slow cooker; and maybe some more cooking would make it easier to pull apart? I say try cooking it on low for the day and see what happens!

    Anyone else out there with slow cooker advice?
